1 pound dried navy beans, soaked overnight and drained
1 pound bacon, cut into 1-inch pieces
1 large onion, chopped
1 cup ketchup
1/2 cup packed brown sugar
1/4 cup molasses
1/4 cup apple cider vinegar
2 tablespoons Dijon mustard
1 teaspoon black pepper
1/2 teaspoon salt (optional, adjust based on bacon saltiness)
Instructions
Preheat your oven to 300°F (150°C).
In a large oven-safe pot or Dutch oven, cook the bacon over medium heat until crisp. Remove the bacon with a slotted spoon, leaving the rendered fat in the pot. Set the bacon aside.
Add the chopped onion to the pot with the bacon fat and cook until softened, about 5-7 minutes.
Stir in the ketchup, brown sugar, molasses, apple cider vinegar, Dijon mustard, black pepper, and salt (if using).
Add the drained navy beans to the pot and stir to coat them in the sauce.
Add about 2 cups of water, or enough to cover the beans by about an inch.
Bring the mixture to a simmer on the stovetop, then cover the pot.
Transfer the pot to the preheated oven and bake for 2 to 2.5 hours, or until the beans are tender and the sauce has thickened. Stir occasionally.
Stir in most of the cooked bacon during the last 30 minutes of baking.
Serve hot, garnished with the remaining bacon.
Notes
Soaking the beans overnight is crucial for even cooking.
Adjust the sweetness and tanginess by varying the amounts of brown sugar and vinegar.
If you don’t have molasses, dark corn syrup can be used as a substitute.
