4 (6 ounce) cod fillets, skinless
1 tablespoon olive oil
Salt and black pepper to taste
1/4 cup honey
1/4 cup low sodium soy sauce
2 cloves garlic, minced
1 tablespoon rice vinegar
1 teaspoon fresh ginger, grated
1 teaspoon sesame oil
1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking sheet or line it with parchment paper.
Pat the cod fillets dry with paper towels and season both sides lightly with salt and pepper.
In a small saucepan, combine the honey, soy sauce, minced garlic, rice vinegar, and grated ginger. Bring the mixture to a simmer over medium heat, stirring constantly.
Reduce the heat to low and let the glaze cook for 3 to 5 minutes until it thickens slightly. Whisk in the cornstarch slurry and cook for 1 minute more until the glaze is visibly sticky. Remove from heat and stir in the sesame oil.
Brush half of the glaze mixture evenly over the top of the cod fillets. Place the fillets on the prepared baking sheet.
Bake for 10 to 12 minutes, depending on the thickness of the fish, until the cod is nearly cooked through and flakes easily.
While the fish bakes, heat the olive oil in a large, oven-safe skillet over medium-high heat.
Once the fish is almost done, carefully transfer the fillets from the baking sheet to the hot skillet. Sear for 1 to 2 minutes until the bottom develops a light crust.
Brush the remaining glaze over the tops of the fillets while searing. Cook for 1 minute more, watching carefully to prevent the honey from burning.
Remove from heat immediately and serve the sticky glazed cod.
Notes
For a less sticky glaze, reduce the amount of honey slightly.
If you prefer not to sear, you can bake the fish for the full time, brushing with the remaining glaze during the last 5 minutes of baking.
Use fresh garlic for the best flavor in the glaze.
