Make quick, flavorful rice bowls featuring sticky, sweet, and spicy glazed chicken breast.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1/2 cup honey
  • 1/4 cup Sriracha sauce
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 cups cooked white or brown rice
  • 1 cup steamed broccoli florets
  • 1/4 cup sliced green onions, for garnish
  • 1 tablespoon sesame seeds, for garnish

Instructions

  1. In a small bowl, whisk together the honey, Sriracha, soy sauce, rice vinegar, garlic, and ginger to make the sauce. Set aside half of the sauce for serving later.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the cubed chicken and cook until browned on all sides, about 5-7 minutes.
  3. Pour the reserved half of the sauce over the chicken in the skillet. Bring the sauce to a simmer and cook, stirring frequently, until the sauce thickens and coats the chicken well, about 3-4 minutes.
  4. Assemble the bowls: Divide the cooked rice among four bowls. Top the rice with the glazed chicken and steamed broccoli.
  5. Drizzle the remaining reserved sauce over the chicken and vegetables.
  6. Garnish each bowl with sliced green onions and sesame seeds before serving.

Notes

  • For a healthier option, use chicken thighs instead of breasts.
  • If you prefer less spice, reduce the Sriracha to 2 tablespoons and add 1 teaspoon of brown sugar.
  • You can substitute quinoa or cauliflower rice for the white or brown rice base.
