Make a refreshing iced tea featuring the flavor combination of blackberries and sage. This recipe uses a simple infusion method for a balanced, aromatic cold drink.

Ingredients

  • 4 cups water
  • 1 cup fresh or frozen blackberries
  • 6 sprigs fresh sage
  • 4 black tea bags (or 4 teaspoons loose leaf black tea)
  • 1/2 cup simple syrup (adjust to taste)
  • 1 lemon, sliced (for garnish)
  • Ice cubes

Instructions

  1. Combine the water, blackberries, and sage sprigs in a medium saucepan.
  2. Bring the mixture to a gentle boil over medium heat.
  3. Once boiling, reduce the heat to low and simmer for 10 minutes, lightly mashing the blackberries against the side of the pot to release juice.
  4. Remove the saucepan from the heat. Add the tea bags or loose leaf tea directly to the hot liquid.
  5. Cover the saucepan and let the tea steep for 5 minutes. Do not over-steep.
  6. Remove the tea bags or strain out the loose leaves. Strain the liquid through a fine-mesh sieve into a heat-safe pitcher, pressing gently on the solids to extract all liquid. Discard the solids.
  7. Stir the simple syrup into the warm tea concentrate until dissolved.
  8. Allow the tea concentrate to cool to room temperature, then refrigerate for at least 2 hours until completely chilled.
  9. To serve, fill glasses with ice. Pour the chilled tea over the ice. Garnish each glass with a slice of lemon.

Notes

  • For a caffeine-free version, substitute the black tea bags with hibiscus or rooibos tea bags.
  • Adjust the amount of simple syrup based on the sweetness of your blackberries and your preference.
  • You can substitute honey for simple syrup, but dissolve it while the tea is still warm.
