1 cup granulated sugar
2 tablespoons dried culinary lavender buds
1/2 cup strong brewed espresso or cold brew concentrate
1 cup milk (dairy or non-dairy)

Instructions
Make the lavender simple syrup: Combine water, sugar, and dried lavender buds in a small saucepan.
Heat the mixture over medium heat, stirring until the sugar dissolves completely. Do not boil.
Remove the saucepan from the heat, cover it, and let the lavender steep for 30 minutes.
Strain the syrup through a fine-mesh sieve into a clean jar, pressing lightly on the buds to extract liquid. Discard the buds. Let the syrup cool completely.
To assemble the latte: Add 2 to 3 tablespoons of cooled lavender simple syrup to a glass, depending on your preferred sweetness.
Fill the glass with ice cubes.
Pour the espresso or cold brew concentrate over the ice.
Top with 1 cup of your chosen milk.
Stir well before drinking.
Notes
For a vegan option, use oat milk or almond milk.
Adjust the amount of syrup used to control the floral flavor intensity.
You can store leftover lavender simple syrup in the refrigerator for up to two weeks.
