A simple recipe for a refreshing, tropical, and vibrant iced beverage combining earthy matcha with sweet pineapple and sparkling water.

Ingredients

  • 1 teaspoon ceremonial grade matcha powder
  • 2 tablespoons hot (not boiling) water
  • 1/4 cup pineapple juice, unsweetened
  • 1/2 cup sparkling water or club soda, chilled
  • 1 teaspoon simple syrup or sweetener of choice (optional)
  • Ice cubes
  • 1 slice fresh pineapple for garnish

Instructions

  1. Place the matcha powder into a small bowl or matcha bowl.
  2. Pour the 2 tablespoons of hot water over the matcha.
  3. Whisk the matcha vigorously using a bamboo whisk or a small electric frother until it is completely smooth and slightly foamy. Set aside.
  4. In a tall glass, combine the pineapple juice and simple syrup, if using.
  5. Fill the glass with ice cubes.
  6. Slowly pour the sparkling water over the ice, leaving a little space at the top.
  7. Gently pour the prepared matcha mixture over the sparkling water. Do not stir vigorously; allow the layers to slightly mix naturally for a visual effect.
  8. Garnish the rim of the glass with a slice of fresh pineapple.

Notes

  • Use water that is around 175°F (80°C) for whisking matcha; boiling water can make the matcha taste bitter.
  • For a stronger pineapple flavor, use pineapple puree instead of juice.
  • If you do not have sparkling water, use chilled still water for a less fizzy drink.
