Homemade Iced Strawberry Lemon Tea

A simple recipe for making refreshing iced tea featuring fresh strawberries and lemon.

  • 4 cups water for brewing tea
  • 4 black tea bags (or 4 teaspoons loose leaf black tea)
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 1/2 cup fresh lemon juice (about 3-4 lemons)
  • 2 cups cold water for dilution
  • Ice cubes
  • Lemon slices and mint sprigs for garnish

Instructions

  1. Make the strawberry simple syrup: Combine the sliced strawberries and sugar in a small saucepan with 1 cup of the brewing water. Heat over medium heat, stirring until the sugar dissolves and the strawberries soften, about 5 minutes. Mash the strawberries gently with a spoon. Remove from heat and let steep for 15 minutes.
  2. Strain the strawberry mixture through a fine-mesh sieve into a bowl, pressing on the solids to extract all liquid. Discard the solids. This is your strawberry syrup.
  3. Brew the tea: Bring the remaining 3 cups of water to a boil. Remove from heat and steep the tea bags for 4 to 5 minutes for strong tea. Remove the tea bags.
  4. Combine the tea, the strained strawberry syrup, and the fresh lemon juice in a large pitcher. Stir well.
  5. Add the remaining 2 cups of cold water to the pitcher and stir again. Taste and adjust sweetness or tartness if needed.
  6. Chill the tea mixture in the refrigerator for at least 1 hour.
  7. To serve, fill glasses with ice. Pour the chilled tea over the ice. Garnish each glass with a lemon slice and a mint sprig.

Notes

  • For a different flavor, substitute black tea with green tea or hibiscus tea. Adjust steeping time for green tea to 3 minutes.
  • If you prefer a less sweet tea, reduce the sugar in the syrup to 1/4 cup.
  • You can muddle a few fresh strawberries directly into the serving glass before adding ice for extra fruit flavor.
  • This tea concentrate can be made ahead and stored in the refrigerator for up to 3 days.
