Make a hearty, creamy chicken and rice soup quickly using your Instant Pot. This one-pot meal is simple to prepare for a fast weeknight dinner.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 1 cup uncooked white rice, rinsed
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1/2 cup cold water

Instructions

  1. Set the Instant Pot to SAUTÉ mode. Add olive oil. When hot, add the chicken pieces and cook until lightly browned on all sides, about 3 minutes. Remove chicken and set aside.
  2. Add onion, carrots, and celery to the pot. Sauté until softened, about 4 minutes.
  3. Pour in the chicken broth, scraping up any browned bits from the bottom of the pot.
  4. Stir in the rinsed rice, thyme, rosemary, salt, and pepper. Return the browned chicken to the pot.
  5. Secure the lid and set the vent to SEALING. Select MANUAL or PRESSURE COOK on HIGH for 6 minutes.
  6. When the cooking cycle finishes, allow a NATURAL PRESSURE RELEASE for 10 minutes, then carefully quick release any remaining pressure.
  7. In a small bowl, whisk together the heavy cream, flour, and cold water until smooth to create a slurry.
  8. Set the Instant Pot to SAUTÉ mode (LOW setting). Slowly stir the cream slurry into the soup. Stir constantly until the soup thickens, about 2 to 3 minutes. Do not allow it to boil rapidly.
  9. Serve hot.

Notes

  • For a gluten-free option, substitute the flour and water slurry with 1 tablespoon of cornstarch mixed with 2 tablespoons of cold water.
  • If you prefer a richer flavor, use chicken thighs instead of breasts.
  • You can substitute white rice with brown rice, but you will need to increase the pressure cooking time to 10 minutes with a 10-minute natural release.
