1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
Return the browned chicken to the pot. Pour in the chicken broth. Stir in Italian seasoning, salt, and pepper.
Secure the lid and set the vent to Sealing. Cook on Manual/Pressure Cook High for 5 minutes.
When cooking is complete, perform a Quick Pressure Release (QPR) by carefully turning the valve to Venting.
Open the lid. Stir in the cream cheese cubes until they melt completely into the broth.
Stir in the heavy cream and Parmesan cheese until the soup is smooth and creamy.
Add the tortellini and cook on the Keep Warm setting, stirring occasionally, until the tortellini are tender, about 5 to 7 minutes.
Stir in the fresh spinach, if using, until wilted. Serve immediately.
Notes
For the creamiest texture, ensure the cream cheese is cut into small cubes before adding it to the hot liquid.
You can use frozen tortellini; add them during step 7 and let them cook on the Keep Warm setting until done, which may take slightly longer.
If you prefer a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir this slurry into the soup during the last minute of cooking on the Keep Warm setting.
