Make rich, creamy garlic butter potatoes quickly using your Instant Pot. This recipe delivers tender potatoes coated in a savory sauce.

Ingredients

Scale
  • 2 lbs small yellow or red potatoes, quartered
  • 1 cup chicken or vegetable broth
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Place the quartered potatoes and broth into the inner pot of your Instant Pot.
  2. Secure the lid and set the vent to sealing.
  3. Cook on High Pressure for 4 minutes.
  4. When the cooking time finishes, allow for a Natural Pressure Release for 5 minutes, then manually quick release any remaining pressure.
  5. Carefully remove the lid. Drain off any excess liquid, leaving about 1/4 cup of liquid in the pot.
  6. Set the Instant Pot to the Sauté function (Normal setting).
  7. Add the butter, minced garlic, salt, and pepper to the pot. Stir until the butter melts and the garlic is fragrant, about 1 minute.
  8. Stir in the heavy cream and Parmesan cheese. Let the sauce simmer and thicken slightly, stirring often, about 2 to 3 minutes.
  9. Taste the sauce and adjust salt and pepper if needed.
  10. Serve immediately, garnished with fresh parsley.

Notes

  • You can use milk instead of heavy cream, but the sauce will be thinner.
  • For a richer flavor, use fresh garlic instead of garlic powder.
  • If you prefer a smashed texture, gently press some of the cooked potatoes against the side of the pot before adding the cream mixture.
