- 2 lbs small yellow or red potatoes, quartered
- 1 cup chicken or vegetable broth
- 4 cloves garlic, minced
- 4 tablespoons unsalted butter
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
- Place the quartered potatoes and broth into the inner pot of your Instant Pot.
- Secure the lid and set the vent to sealing.
- Cook on High Pressure for 4 minutes.
- When the cooking time finishes, allow for a Natural Pressure Release for 5 minutes, then manually quick release any remaining pressure.
- Carefully remove the lid. Drain off any excess liquid, leaving about 1/4 cup of liquid in the pot.
- Set the Instant Pot to the Sauté function (Normal setting).
- Add the butter, minced garlic, salt, and pepper to the pot. Stir until the butter melts and the garlic is fragrant, about 1 minute.
- Stir in the heavy cream and Parmesan cheese. Let the sauce simmer and thicken slightly, stirring often, about 2 to 3 minutes.
- Taste the sauce and adjust salt and pepper if needed.
- Serve immediately, garnished with fresh parsley.
Notes
- You can use milk instead of heavy cream, but the sauce will be thinner.
- For a richer flavor, use fresh garlic instead of garlic powder.
- If you prefer a smashed texture, gently press some of the cooked potatoes against the side of the pot before adding the cream mixture.
