Instant Pot Korean Beef and Rice Bowls

Make tender, flavorful Korean-style beef quickly using your Instant Pot, served over rice with fresh toppings.

Ingredients

  • 1.5 lbs ground beef
  • 0.5 cup low sodium soy sauce
  • 0.25 cup brown sugar, packed
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon gochugaru (Korean chili flakes, optional)
  • 0.5 cup water or beef broth
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water (slurry)
  • 4 cups cooked white or brown rice (for serving)
  • For Toppings: Sliced green onions, toasted sesame seeds, kimchi (optional)

Instructions

  1. Place the ground beef, soy sauce, brown sugar, sesame oil, rice vinegar, minced garlic, grated ginger, and gochugaru (if using) directly into the inner pot of your Instant Pot.
  2. Pour the water or beef broth over the ingredients. Stir gently to combine the sauce ingredients with the beef, breaking up the meat slightly. Do not mix too vigorously.
  3. Secure the lid on the Instant Pot and set the vent to the sealing position.
  4. Select the Manual or Pressure Cook setting and set the time for 8 minutes on High Pressure.
  5. When the cooking cycle finishes, allow a Natural Pressure Release (NPR) for 5 minutes, then carefully turn the valve to the venting position for a Quick Release (QR) of any remaining pressure.
  6. Open the lid. Switch the Instant Pot to the Sauté function (Normal setting).
  7. Once the beef mixture is simmering, slowly whisk in the cornstarch slurry until the sauce thickens to your desired consistency, about 1 to 2 minutes.
  8. Serve the Korean beef immediately over 1 cup of cooked rice per bowl. Top with sliced green onions and toasted sesame seeds.

Notes

  • If you prefer shredded beef instead of ground beef, substitute 1.5 lbs of beef chuck roast, cut into 2-inch chunks, and increase the cook time to 30 minutes on High Pressure with a full NPR.
  • For a slightly sweeter sauce, increase the brown sugar by 1 tablespoon.
  • You can cook the rice separately in a rice cooker or use the Instant Pot’s pot after removing the cooked beef and cleaning it.
