Jalapeño Cheddar Cornbread

Spicy and cheesy cornbread perfect for any meal.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 cup buttermilk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped fresh jalapeños, seeds removed for less heat

Instructions

  1. Preheat your oven to 400°F (200°C). Grease and flour an 8×8 inch baking pan.
  2. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, salt, and baking soda.
  3. In a separate bowl, whisk together the buttermilk, melted butter, and eggs.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the shredded cheddar cheese and chopped jalapeños.
  6. Pour the batter into the prepared baking pan.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let it cool slightly before slicing and serving.

Notes

  • For a milder flavor, remove the seeds and membranes from the jalapeños before chopping.
  • If you don’t have buttermilk, you can make a substitute by adding 1 tablespoon of white vinegar or lemon juice to 1 cup of milk and letting it sit for 5 minutes.
  • This cornbread is delicious served warm with butter, honey, or alongside chili or barbecue.
