Spice up your life with these amazing Jalapeño Popper Stuffed Chicken breasts. Juicy chicken filled with a creamy, cheesy jalapeño mixture and wrapped in crispy bacon. Perfect for game day or any gathering!

  • 4 boneless, skinless chicken breasts
  • 8 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely diced jalapeños (fresh or pickled)
  • 1/4 cup finely diced onion
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 slices bacon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together the softened cream cheese, shredded cheddar cheese, diced jalapeños, diced onion, garlic powder, salt, and pepper until well combined.
  3. Butterfly each chicken breast by slicing it horizontally, almost all the way through, to create a pocket.
  4. Stuff each chicken breast pocket with the cream cheese and jalapeño mixture.
  5. Wrap two slices of bacon around each stuffed chicken breast, securing with toothpicks if needed.
  6. Place the wrapped chicken breasts on a baking sheet lined with parchment paper.
  7. Bake for 25-30 minutes, or until the chicken is cooked through and the bacon is crispy.
  8. Let rest for a few minutes before serving.

Notes

  • For a milder flavor, remove the seeds and membranes from the jalapeños before dicing.
  • You can substitute Monterey Jack cheese for cheddar if you prefer.
  • If you don’t have toothpicks, you can secure the bacon by tucking the ends underneath the chicken.
