A simple recipe for chicken breasts filled with a rich mixture of spinach, cream cheese, and mozzarella, baked until golden brown. This dish is low-carb and keto-friendly.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 cup fresh spinach, finely chopped
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/4 teaspoon nutmeg (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Prepare the chicken: Place each chicken breast between two sheets of plastic wrap. Pound the thickest part gently with a meat mallet until the breast is about 1/2 inch thick and uniform in size. Season both sides with salt and pepper.
  3. Make the filling: In a medium bowl, combine the chopped spinach, softened cream cheese, mozzarella cheese, Parmesan cheese, minced garlic, and nutmeg. Mix until all ingredients are fully incorporated.
  4. Stuff the chicken: Place about 1/4 of the cheese and spinach mixture onto the center of one side of a flattened chicken breast. Fold the other side of the chicken breast over the filling to enclose it, creating a pocket or sealed roll. Secure the edges with toothpicks if necessary to prevent the filling from leaking.
  5. Cook the chicken: Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes per side until lightly browned.
  6. Transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
  7. Remove the toothpicks before serving.

Notes

  • To prevent the filling from leaking during baking, press the edges of the chicken together firmly after stuffing. You can also wrap the seam tightly with one strip of bacon for extra security and flavor.
  • For a quicker cook time, you can slice a pocket into the side of the chicken breast instead of pounding and folding.
  • You can substitute Gruyère or provolone cheese for the mozzarella if desired.
