1.5 lb pork tenderloin, trimmed
2 tbsp olive oil
4 cloves garlic, minced
1 tsp dried thyme
1 tsp dried rosemary
1/2 tsp salt
1/4 tsp black pepper
4 oz cream cheese, softened
1/2 cup heavy cream
1/4 cup chicken broth
2 tbsp fresh parsley, chopped
Instructions
Preheat your oven to 400°F (200°C). Pat the pork tenderloin dry with paper towels.
In a small bowl, mix the softened cream cheese with half of the minced garlic, thyme, and rosemary.
Make small slits along the top of the pork tenderloin. Stuff the cream cheese mixture evenly into these slits.
Season the outside of the pork with salt and pepper.
Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the pork tenderloin on all sides until golden brown, about 2 minutes per side.
Transfer the skillet to the preheated oven. Roast for 15 to 20 minutes, or until the internal temperature reaches 145°F (63°C). Remove the pork and let it rest on a cutting board, covered loosely with foil.
Place the skillet back on the stovetop over medium heat. Add the remaining minced garlic and cook for 30 seconds until fragrant.
Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
Reduce the heat to low. Stir in the heavy cream until the sauce thickens slightly. Taste and adjust seasoning if needed.
Slice the rested pork tenderloin into thick medallions. Spoon the creamy garlic herb sauce over the pork and garnish with fresh parsley before serving.
Notes
For extra flavor, you can rub the pork with 1 teaspoon of garlic powder before searing.
If you do not have an oven-safe skillet, sear the pork in a regular skillet and transfer it to a baking dish before roasting.
Use full-fat cream cheese for the best keto compliance and texture.
