Prepare a quick, low-carb shrimp dish cooked in a rich, garlic cream sauce using just one skillet.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp lemon juice
  • 1 tsp dried Italian seasoning
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Add minced garlic and cook for one minute until fragrant. Do not let the garlic brown.
  3. Add the shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.
  4. Pour the heavy cream and chicken broth into the same skillet. Bring the mixture to a low simmer, scraping up any browned bits from the bottom.
  5. Stir in the Parmesan cheese, Italian seasoning, salt, and pepper. Continue stirring until the cheese melts and the sauce thickens slightly, about 2 minutes.
  6. Return the cooked shrimp to the skillet. Stir to coat the shrimp in the sauce.
  7. Remove the skillet from the heat and stir in the lemon juice.
  8. Garnish with fresh parsley before serving.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes with the garlic.
  • If the sauce becomes too thick, add a tablespoon of water or broth to thin it to your preferred consistency.
  • Serve this dish over zucchini noodles or cauliflower rice to keep it strictly keto.
