1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
4 oz cream cheese, softened
1/2 cup heavy cream
1/2 cup shredded cheddar cheese
1/4 cup shredded Monterey Jack cheese
2 tablespoons butter
1/2 cup cooked, crumbled bacon
1/4 cup diced jalapenos (seeds removed for less heat)
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Instructions
Season the chicken pieces with salt and pepper.
Heat the olive oil and butter in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
Reduce the heat to medium. Add the minced garlic and diced jalapenos to the skillet and cook for 1 minute until fragrant.
Stir in the softened cream cheese and heavy cream. Cook, stirring constantly, until the cream cheese melts and the sauce is smooth.
Stir in the cheddar cheese and Monterey Jack cheese until fully melted and the sauce thickens slightly.
Return the cooked chicken to the skillet. Stir to coat the chicken in the sauce.
Stir in the crumbled bacon. Heat through for 2 minutes.
Serve immediately over cauliflower rice or steamed low-carb vegetables.
Notes
For a spicier dish, leave some or all of the jalapeno seeds in.
You can bake this dish: transfer the mixture to a baking dish, top with extra cheese, and bake at 375°F for 15 minutes until bubbly.
