1 tablespoon olive oil
1 pound ground beef or turkey
1 small onion, chopped
2 cloves garlic, minced
1 packet (1 ounce) low-carb taco seasoning mix
1 cup chicken broth
8 ounces cream cheese, cubed
1/2 cup heavy cream
1 bag (12 ounces) frozen cauliflower rice
1 cup shredded cheddar or Monterey Jack cheese
1/4 cup chopped fresh cilantro, for garnish
2 tablespoons sour cream, for topping (optional)
Instructions
Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft, about 4 minutes.
Add the ground meat to the skillet. Break it apart with a spoon and cook until browned. Drain off any excess fat.
Stir in the minced garlic and taco seasoning. Cook for 1 minute until fragrant.
Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
Reduce the heat to low. Add the cubed cream cheese and heavy cream. Stir constantly until the cream cheese melts and the sauce becomes smooth and creamy.
Stir in the frozen cauliflower rice. Cover the skillet and let it cook for 5 to 7 minutes, or until the cauliflower rice is tender.
Remove the lid. Stir in the shredded cheese until it melts into the mixture.
Serve immediately, garnished with fresh cilantro and a dollop of sour cream if desired.

Check your taco seasoning label to ensure it contains no added sugar or starches to keep it strictly keto.
If you prefer a thicker sauce, cook uncovered for a few extra minutes after adding the cauliflower rice.
