4 bone-in, skin-on chicken thighs
1 tablespoon avocado oil or melted butter
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon paprika
1/4 teaspoon baking powder (aluminum-free, for extra crispiness)
Instructions
Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).
Pat the chicken thighs completely dry using paper towels. This step is crucial for crispiness.
In a small bowl, mix the salt, pepper, garlic powder, paprika, and baking powder.
Rub the chicken thighs all over with the avocado oil or melted butter.
Sprinkle the spice mixture evenly over the skin side of the thighs, pressing gently so it adheres.
Place the chicken thighs skin-side up on a wire rack set inside a baking sheet. Do not let the skin touch the pan.
Bake for 35 to 45 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the skin is deeply golden brown and crisp.
For extra crisping, switch the oven to the broiler setting for the last 1 to 3 minutes, watching closely to prevent burning.
