Make crispy, air-fried chicken pieces and serve them inside large romaine lettuce leaves with a homemade keto Caesar dressing for a satisfying low-carb meal.

  • 2 large boneless, skinless chicken breasts, cut into 1-inch strips
  • 1 cup crushed pork rinds (for coating)
  • 1/2 cup almond flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten
  • 1 tablespoon avocado oil (for spraying)
  • 8 large romaine lettuce leaves, washed and dried
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons bacon bits (optional)

Instructions

  1. Prepare the coating: Mix the crushed pork rinds, almond flour, garlic powder, salt, and pepper in a shallow dish.
  2. Dip each chicken strip first into the beaten egg, letting excess drip off.
  3. Dredge the chicken thoroughly in the pork rind mixture, pressing lightly to adhere the coating.
  4. Preheat your air fryer to 380°F (195°C).
  5. Lightly spray the coated chicken pieces with avocado oil spray.
  6. Air fry the chicken for 10 to 12 minutes, flipping halfway through, until golden brown and cooked through (internal temperature of 165°F or 74°C).
  7. While the chicken cooks, prepare the keto Caesar dressing (see notes).
  8. Assemble the wraps: Lay out the romaine leaves. Spoon a small amount of Caesar dressing onto the base of each leaf.
  9. Top the dressing with several pieces of crispy chicken.
  10. Sprinkle with Parmesan cheese and bacon bits, if using.
  11. Fold the sides of the lettuce leaf inward slightly and serve immediately as a wrap.

Notes

  • For the Keto Caesar Dressing: Combine 1/2 cup mayonnaise, 1 tablespoon Dijon mustard, 1 tablespoon lemon juice, 1 teaspoon Worcestershire sauce (check for no added sugar), 1 clove minced garlic, 1/4 cup grated Parmesan cheese, and salt and pepper to taste. Whisk until smooth.
  • If you do not have an air fryer, bake the chicken on a parchment-lined sheet at 400°F (200°C) for 15-20 minutes, flipping once.
  • Use large, sturdy butter lettuce or iceberg lettuce if romaine leaves are too small to hold the filling.
