- 4 (6 oz) cod fillets, about 1 inch thick
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 1/4 cup almond flour
- 1 large egg, lightly beaten
- 1 teaspoon garlic powder
- 1/2 teaspoon dried parsley
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat the cod fillets very dry using paper towels. This step helps achieve crispiness.
- In a shallow dish, combine the grated Parmesan cheese, almond flour, garlic powder, parsley, salt, and pepper. Mix well.
