Make genuinely crispy zucchini fries using a Parmesan crust instead of breadcrumbs. This recipe is designed for the ketogenic diet and results in a satisfying, low-carb side dish or appetizer.

  • 3 medium zucchini
  • 1 large egg
  • 2 tablespoons heavy cream
  • 1 cup grated Parmesan cheese, divided
  • 1/2 cup almond flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray or 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray. If using an air fryer, preheat to 400°F (200°C).
  2. Cut the zucchini into fry shapes, about 1/4 to 1/3 inch thick.
  3. Place the zucchini sticks on several layers of paper towels. Cover with more paper towels and press firmly to draw out as much moisture as possible. This step is crucial for crispiness.
  4. Set up a dredging station with three shallow bowls. In the first bowl, whisk the egg and heavy cream together.
  5. In the second bowl, mix 1/2 cup of the grated Parmesan cheese with the almond flour, garlic powder, onion powder, salt, and pepper.
  6. In the third bowl, place the remaining 1/2 cup of Parmesan cheese.
  7. Dip each zucchini stick first into the egg mixture, letting excess drip off.
  8. Next, dredge the stick in the almond flour/Parmesan mixture, pressing lightly to coat.
  9. Finally, roll the coated stick in the plain Parmesan cheese to create a final crust layer.
  10. Arrange the coated zucchini fries in a single layer on the prepared baking sheet or in the air fryer basket, ensuring they do not touch. Lightly spray the tops with cooking spray or drizzle with olive oil.
  11. Bake for 15-20 minutes, flipping halfway through, until golden brown and crisp. For air frying, cook for 10-12 minutes, shaking the basket halfway through.
  12. Serve immediately with your favorite keto dipping sauce.

  • For extra crispiness when baking, place the baking sheet in the oven while it preheats.
  • If you prefer an air fryer, this method generally yields the crispiest result.
  • To make a keto ranch dip, mix 1/2 cup sour cream, 1/4 cup mayonnaise, 1 tablespoon fresh dill, 1 teaspoon dried parsley, 1/2 teaspoon onion powder, and salt and pepper to taste.
