Bake bell peppers filled with seasoned ground beef, cheese, and low-carb vegetables for a satisfying keto dinner.

  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 packet low-carb taco seasoning (check label for no added sugar)
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking dish.
  2. Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the pepper halves cut-side up in the prepared baking dish.
  3. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  4. Add the ground beef to the skillet. Cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  5. Stir in the low-carb taco seasoning and water. Bring the mixture to a simmer and cook until the liquid reduces slightly, about 5 minutes.
  6. Spoon the taco meat mixture evenly into the bell pepper halves.
  7. Top each stuffed pepper half with shredded cheddar cheese.
  8. Bake for 25 to 30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  9. Remove from the oven. Top each serving with a dollop of sour cream and chopped cilantro before serving.

Notes

  • For a creamier filling, mix half of the shredded cheese into the meat mixture before stuffing the peppers.
  • Use ground turkey or ground chicken instead of beef for a lighter option.
  • Serve with sliced avocado or guacamole on the side for extra healthy fats.
  • If you prefer a softer pepper, you can microwave the halves for 2 minutes before stuffing them.
