1 lb ground pork or ground beef
1/4 cup panko breadcrumbs
1 large egg, lightly beaten
2 cloves garlic, minced
1 tsp fresh ginger, grated
2 tbsp soy sauce
1 tbsp gochujang (Korean chili paste)
1 tsp sesame oil
1/4 tsp black pepper
1 tbsp vegetable oil (for cooking)
For the Spicy Mayo Dip:
1/2 cup mayonnaise
2 tbsp gochujang
1 tbsp rice vinegar
1 tsp honey or maple syrup
1 tsp lime juice
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, combine the ground meat, panko breadcrumbs, egg, minced garlic, grated ginger, soy sauce, gochujang, sesame oil, and black pepper. Mix gently with your hands until just combined; do not overmix.
Roll the mixture into uniform 1-inch meatballs and place them on the prepared baking sheet.
Bake for 18 to 20 minutes, or until the internal temperature reaches 160°F (71°C) and the meatballs are browned.
While the meatballs bake, prepare the dip. In a small bowl, whisk together the mayonnaise, gochujang, rice vinegar, honey, and lime juice until smooth.
Remove the meatballs from the oven. If you prefer a glaze, you can toss the hot meatballs in a mixture of 2 tbsp soy sauce and 1 tbsp honey before serving.
Serve the Korean BBQ meatballs warm with the spicy mayo dip on the side.
Notes
You can substitute ground chicken for pork or beef.
For air fryer cooking, cook at 375°F (190°C) for 10 to 12 minutes, shaking the basket halfway through.
These meatballs freeze well after baking; cool completely, then store in an airtight container for up to 3 months.
