  • 1 pound lean ground beef or turkey
  • 1 (24 ounce) jar of your favorite marinara sauce
  • 1 (15 ounce) container of cottage cheese (small curd recommended)
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 9 oven-ready lasagna noodles
  • 3 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground meat in a large skillet over medium heat. Drain off any excess fat. Stir in the marinara sauce and simmer for 5 minutes.
  3. In a medium bowl, mix together the cottage cheese, egg, Parmesan cheese, Italian seasoning, salt, and pepper. This is your high protein filling.
  4. Spread a thin layer of the meat sauce on the bottom of the prepared baking dish.
  5. Arrange three lasagna noodles over the sauce.
  6. Spread half of the cottage cheese mixture evenly over the noodles.
  7. Sprinkle one cup of mozzarella cheese over the cottage cheese layer.
  8. Spoon half of the remaining meat sauce over the mozzarella.
  9. Repeat the layers: three noodles, the rest of the cottage cheese mixture, one cup of mozzarella, and the rest of the meat sauce.
  10. Top with the final three noodles and the remaining cup of mozzarella cheese.
  11. Cover the dish tightly with aluminum foil. Bake for 25 minutes.
  12. Remove the foil and bake for an additional 15 to 20 minutes, or until the cheese is melted and bubbly and the edges are browned.
  13. Let the baked pasta rest for 10 minutes before slicing and serving.

Notes

  • If you prefer a smoother texture, blend the cottage cheese mixture briefly in a food processor before mixing in the egg and seasonings.
  • For a low salt option, use low sodium marinara sauce and reduce added salt.
  • You can assemble this entire lasagna recipe ahead of time and refrigerate it for up to 24 hours before baking. Add 10 minutes to the covered baking time if baking straight from the refrigerator.
