1 (24 ounce) package refrigerated cheese ravioli
1 (24 ounce) jar marinara sauce
1 (15 ounce) container ricotta cheese
1 egg
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups shredded mozzarella cheese
Instructions
Preheat your oven to 375°F (190°C).
In a medium bowl, combine ricotta cheese, egg, Parmesan cheese, parsley, salt, and pepper. Mix well.
Spread about 1 cup of marinara sauce in the bottom of a 9×13 inch baking dish.
Arrange half of the ravioli in a single layer over the sauce.
Spread half of the ricotta mixture evenly over the ravioli.
Spoon about 1 cup of marinara sauce over the ricotta mixture.
Sprinkle 1 cup of mozzarella cheese over the sauce.
Repeat the layers: place the remaining ravioli, the remaining ricotta mixture, the remaining marinara sauce, and the remaining mozzarella cheese.
Cover the dish with foil.
Bake for 25 minutes.
Remove the foil and bake for another 10-15 minutes, or until the cheese is melted and bubbly and the sauce is hot.
Let it rest for a few minutes before serving.
Notes
For an extra layer of flavor, you can add a pinch of red pepper flakes to the ricotta mixture.
If you prefer a saucier lasagna, you can use an extra jar of marinara sauce.
Garnish with fresh basil or extra parsley before serving.
