Instructions
Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease well.
In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
In a separate medium bowl, whisk the egg, milk, oil (or butter), lemon zest, lemon juice, and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are fine.
In a small bowl, toss the fresh blueberries with 1 tablespoon of the flour mixture reserved from the dry ingredients. This step helps prevent sinking.
Gently fold the coated blueberries into the batter.
Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
