A straightforward recipe for roasting bone-in, skin-on chicken thighs seasoned with fresh lemon and garlic for a flavorful main course.

  • 6 bone-in, skin-on chicken thighs
  • 4 cloves garlic, minced
  • 1 large lemon, zested and juiced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Pat the chicken thighs completely dry using paper towels. This helps achieve crispy skin.
  3. In a small bowl, combine the minced garlic, lemon zest, lemon juice, olive oil, oregano, thyme, salt, pepper, and paprika. Mix well.
  4. Place the chicken thighs in a large bowl or directly onto a rimmed baking sheet. Pour the seasoning mixture over the chicken. Use your hands to rub the mixture evenly over all surfaces of the chicken, getting some under the skin if possible.
  5. Arrange the chicken thighs skin-side up on the baking sheet, ensuring they are not touching.
  6. Roast for 35 to 45 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) in the thickest part of the thigh. The skin should be golden brown and crisp.
  7. Remove the chicken from the oven and let it rest on the baking sheet for 5 minutes before serving.

Notes

  • For extra crispy skin, place the chicken on a wire rack set inside the baking sheet before roasting.
  • If you prefer a deeper flavor, marinate the chicken for at least 30 minutes or up to 4 hours before roasting.
  • Serve this dish with roasted potatoes or a simple green salad.
