1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
2 tablespoons butter
4 cloves garlic, minced
1 cup orzo pasta
3 cups chicken broth
1/2 cup dry white wine (optional)
Zest of 1 lemon
Juice of 1 lemon
1/2 cup grated Parmesan cheese
1/4 cup fresh parsley, chopped
Salt and black pepper to taste
Instructions
Season the shrimp lightly with salt and pepper.
Heat the olive oil and butter in a large skillet over medium heat.
Add the minced garlic and cook for 1 minute until fragrant. Do not let it brown.
Add the orzo to the skillet and toast for 2 minutes, stirring constantly.
Pour in the chicken broth and white wine (if using). Bring the mixture to a simmer.
Cook, stirring occasionally, for about 10-12 minutes, or until the orzo is mostly tender and most of the liquid is absorbed.
Stir in the lemon zest and lemon juice.
Add the seasoned shrimp to the skillet, nestling them into the orzo. Cook for 3-5 minutes, stirring gently, until the shrimp are pink and cooked through.
Remove the skillet from the heat. Stir in the Parmesan cheese and fresh parsley.
Taste and adjust seasoning with salt and pepper before serving.
Notes
For a richer flavor, use vegetable broth instead of chicken broth.
If you prefer a creamier texture, stir in 1/4 cup of heavy cream along with the Parmesan cheese at the end.
Add 1 cup of frozen peas during the last 5 minutes of cooking the orzo for added color and nutrition.
