1 bag tortilla chips
1 lb ground beef or shredded chicken
1 packet taco seasoning
1 can refried beans, warmed
2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
Spread the tortilla chips evenly onto a large baking sheet.
If using ground beef, cook it in a skillet over medium heat until browned. Drain off any excess fat. Stir in the taco seasoning and a little water according to packet directions. If using shredded chicken, warm it and toss with taco seasoning.
Spread the refried beans over the chips in dollops.
Scatter the cooked meat over the beans.
Sprinkle the chopped onion and bell pepper over the meat.
Generously cover everything with shredded cheese.
Bake for 10-15 minutes, or until the cheese is melted and bubbly.
Add your favorite optional toppings before serving.
Notes
For extra flavor, you can lightly toast the chips before adding toppings.
