  • 2 cups coconut milk
  • 1/4 cup pureed ripe mango
  • 2 tablespoons maple syrup (or to taste)
  • 1 teaspoon vanilla extract
  • Fresh mango cubes, for topping
  • Shredded coconut, for topping

Instructions

  1. In a bowl, whisk together chia seeds, coconut milk, pureed mango, maple syrup, and vanilla extract until well combined.
  2. Pour the mixture into jars or containers.
  3. Cover and refrigerate for at least 4 hours, or preferably overnight, until thickened.
  4. Before serving, stir the pudding. Top with fresh mango cubes and shredded coconut.
