1 pound dried or fresh cheese tortellini
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
4 cloves garlic, minced
1/2 cup sun-dried tomatoes packed in oil, drained and chopped
1 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese, plus more for serving
1/4 cup fresh basil leaves, chopped
Instructions
Cook the tortellini according to package directions until al dente. Drain and set aside.
Season the chicken pieces with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
Add the chopped sun-dried tomatoes and chicken broth. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan. Let it reduce slightly for 2 minutes.
Stir in the heavy cream and bring the sauce back to a gentle simmer. Cook for 3 minutes, stirring occasionally, until the sauce begins to thicken.
Reduce the heat to low. Stir in the grated Parmesan cheese until the sauce is smooth and creamy. Do not let the sauce boil after adding the cheese.
Return the cooked chicken and the drained tortellini to the skillet. Toss everything gently to coat evenly in the sauce.
Stir in the fresh basil just before serving. Serve immediately with extra Parmesan cheese on top.
Notes
You can substitute shrimp for the chicken for a quick variation. Add the shrimp when you add the garlic and cook until pink, about 3 minutes per side.
If you prefer a thinner sauce, add a splash more chicken broth or heavy cream.
Use high-quality Parmesan cheese for the best flavor in the sauce.
