Make these simple, crispy baked snacks featuring classic Mediterranean flavors of spinach and salty feta cheese using phyllo dough. They are perfect for parties or a quick bite.

  • 10 sheets phyllo dough, thawed
  • 2 tablespoons olive oil, plus extra for brushing
  • 10 ounces fresh spinach, chopped
  • 6 ounces feta cheese, crumbled
  • 1/4 cup ricotta cheese
  • 1 large egg, lightly beaten
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh dill, chopped

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking sheet.
  2. In a skillet over medium heat, warm 1 tablespoon of olive oil. Add the chopped spinach and cook until wilted and all the moisture has evaporated, about 5 to 7 minutes. Remove from heat and let it cool slightly.
  3. In a medium bowl, combine the cooled spinach, crumbled feta cheese, ricotta cheese, beaten egg, nutmeg, black pepper, and fresh dill. Mix until just combined.
  4. Lay one sheet of phyllo dough flat on your work surface. Brush the entire surface lightly with olive oil. Place another sheet directly on top of the first. Repeat this process until you have a stack of 5 sheets, brushing each layer with oil.
  5. Cut the stacked phyllo sheets into 9 equal squares. Place a small spoonful (about 1 teaspoon) of the spinach and feta mixture in the center of each square.
  6. Fold the corners of the phyllo square over the filling to meet in the center, creating a small, rustic pouch or purse shape. Gently press the edges to seal.
  7. Place the assembled crisps seam-side down on the prepared baking sheet. Brush the tops lightly with the remaining olive oil.
  8. Repeat steps 4 through 6 with the remaining 5 sheets of phyllo dough and filling to make a second batch.
  9. Bake for 12 to 15 minutes, or until the phyllo is golden brown and crisp. Serve warm as an easy Mediterranean appetizer.

Notes

  • For extra crispiness, you can air fry these at 350°F (175°C) for 8 to 10 minutes.
  • You can prepare these savory Greek pastries ahead of time and freeze them before baking. Place them on a tray in the freezer, and once solid, transfer them to a freezer bag. Bake from frozen, adding 5 minutes to the cook time.
