Make a crisp, layered Mexican Pizza at home that tastes better than the fast-food version. This recipe uses seasoned ground beef, refried beans, and plenty of cheese between two crispy tortillas.

  • 4 large flour tortillas (about 8-inch diameter)
  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 1 packet (1 ounce) taco seasoning mix
  • 1/2 cup water
  • 1 (16 ounce) can refried beans, warmed
  • 1 cup enchilada sauce (red)
  • 2 cups shredded Mexican cheese blend
  • 1/2 cup sliced black olives
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Place one tortilla in the skillet and cook for 2 to 3 minutes per side until golden brown and crisp. Remove and set aside. Repeat with the remaining three tortillas.
  2. Brown the ground beef in the same skillet, breaking it up as it cooks. Drain off any excess fat.
  3. Stir in the taco seasoning mix and water. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the sauce thickens slightly.
  4. Place one crisp tortilla on a baking sheet. Spread half of the warmed refried beans evenly over the tortilla.
  5. Spoon half of the seasoned ground beef mixture over the beans.
  6. Top the beef layer with half of the shredded cheese.
  7. Place the second crisp tortilla on top of the cheese layer.
  8. Spread the remaining refried beans over the second tortilla.
  9. Top with the remaining ground beef mixture and the remaining shredded cheese.
  10. Pour the enchilada sauce evenly over the top layer of cheese.
  11. Bake at 400 degrees Fahrenheit for 8 to 10 minutes, or until the cheese is fully melted and bubbly.
  12. Remove from the oven. Top with sliced black olives, diced tomatoes, and sliced green onions.
  13. Slice into wedges and serve immediately.

Notes

  • For extra crispiness, you can lightly brush the tortillas with oil before baking them briefly in the oven before assembly.
  • Use a mild or spicy enchilada sauce based on your preference for heat.
  • If you prefer a vegetarian option, substitute the ground beef with black beans or plant-based crumbles seasoned with taco spices.
