1 lb Cremini mushrooms, halved or quartered
1 tablespoon olive oil
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup mayonnaise
1/4 cup sour cream or Mexican crema
1/2 cup Cotija cheese, crumbled, plus extra for topping
1/4 cup fresh lime juice
1 jalapeño, minced (seeds removed for less heat)
1/2 teaspoon chili powder
1/4 cup fresh cilantro, chopped
2 green onions, thinly sliced
Instructions
Preheat your oven to 400°F (200°C). Toss the mushrooms with olive oil, smoked paprika, salt, and pepper on a baking sheet.
Roast the mushrooms for 15 to 20 minutes, stirring halfway through, until they are tender and slightly browned. Set aside to cool slightly.
While the mushrooms roast, prepare the dressing. In a medium bowl, whisk together the mayonnaise, sour cream, Cotija cheese, lime juice, minced jalapeño, and chili powder until smooth.
In a large bowl, combine the slightly cooled roasted mushrooms, the prepared dressing, chopped cilantro, and sliced green onions.
Gently fold all ingredients together until the mushrooms are evenly coated.
Taste the salad and adjust seasoning if needed, adding more lime juice or salt.
Transfer the salad to a serving dish and sprinkle with extra crumbled Cotija cheese before serving.
Notes
If you prefer a smoky flavor without roasting, you can grill the mushrooms over medium-high heat until tender.
For a lighter dressing, substitute half the mayonnaise with plain Greek yogurt.
You can substitute Feta cheese for Cotija if Cotija is unavailable, though the flavor profile will change slightly.
