1/4 teaspoon black pepper
1 cup cooked, chopped protein (like ham or bacon)
1 cup shredded cheese (cheddar or Monterey Jack work well)
1/2 cup chopped vegetables (spinach, bell peppers, or onions)
Instructions
Preheat your oven to 350 degrees Fahrenheit. Lightly grease a standard 12-cup muffin tin or use silicone liners for easy removal.
In a large bowl, whisk the eggs, milk, salt, and pepper together until they are well combined and slightly frothy. This helps create a fluffy interior.
Stir in your cooked protein, cheese, and chopped vegetables into the egg mixture. Distribute the mixture evenly among the 12 muffin cups, filling each about three-quarters full.
To prevent rubbery eggs and ensure a tender texture, you must create a water bath (bain-marie). Place the filled muffin tin inside a larger baking pan. Carefully pour hot water into the larger pan until it reaches about halfway up the sides of the muffin tin.
Bake for 18 to 22 minutes. The egg bites are done when they are set in the center and a toothpick inserted comes out clean.
Carefully remove the muffin tin from the water bath. Let the egg muffin cups cool in the tin for about 5 minutes before removing them.
For meal prep, let the egg bites cool completely before storing them in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 2 months.
Notes
If you do not want to use a water bath, reduce the oven temperature to 325 degrees Fahrenheit and bake for 20-25 minutes. The texture might be slightly firmer.
For the best reheating results from frozen, place the egg bites on a microwave-safe plate and microwave on medium power for 1 to 2 minutes, or until heated through.
