Make the best, creamiest nacho cheese dip in just 10 minutes. This simple recipe tastes just like the fast-food favorite and is perfect for game day or topping your favorite tacos.

  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 cup whole milk
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup evaporated milk
  • 1 teaspoon pickled jalapeño brine (from a jar)
  • 1/4 teaspoon salt
  • Pinch of cayenne pepper (optional)

Instructions

  1. Melt the butter in a small saucepan over medium heat.
  2. Whisk in the flour and cook for one minute, stirring constantly to create a roux.
  3. Slowly whisk in the whole milk until the mixture is smooth and begins to thicken slightly.
  4. Reduce the heat to low. Add the shredded cheddar cheese, stirring until it is completely melted and smooth. Do not let it boil.
  5. Stir in the evaporated milk, jalapeño brine, salt, and cayenne pepper, if using.
  6. Continue stirring until the sauce is velvety and reaches your desired consistency.
  7. Remove from heat immediately and serve warm over chips, fries, or tacos.

Notes

  • For an extra smooth, velvety cheese sauce, shred your own cheese instead of using pre-shredded bags, as pre-shredded cheese often contains anti-caking agents that can make the sauce grainy.
  • If the sauce gets too thick while sitting, whisk in a splash of extra milk or water until it loosens up.
  • This recipe makes a fantastic cheesy fries topping.
