1 cup Greek yogurt, plain or vanilla
1 cup fresh strawberries, chopped small
4 ounces dark chocolate, melted
1 tablespoon maple syrup or honey (optional)
1 teaspoon coconut oil (for melting chocolate)
Instructions
Line a baking sheet with parchment paper.
In a medium bowl, gently mix the Greek yogurt, chopped strawberries, and maple syrup if you are using it.
Drop spoonfuls of the yogurt mixture onto the prepared baking sheet, forming small clusters.
Place the baking sheet in the freezer for at least 30 minutes until the clusters are firm.
While the clusters firm up, melt the dark chocolate with the coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
Remove the firm yogurt clusters from the freezer. Dip the top or bottom of each cluster into the melted chocolate, or drizzle the chocolate over them.
Return the clusters to the freezer for another 10 to 15 minutes, or until the chocolate coating is set.
Store the finished clusters in an airtight container in the freezer.
Notes
Use full-fat Greek yogurt for the best texture, as it holds its shape better when frozen.
If you prefer a sweeter cluster, use vanilla-flavored yogurt instead of plain.
For a protein boost, stir 1 scoop of unflavored or vanilla protein powder into the yogurt mixture before dropping onto the sheet.
