Make quick, creamy cheesecake stuffed strawberries without turning on your oven. This recipe uses a simple cream cheese filling and fresh berries for a perfect summer dessert.

  • 1 pint fresh strawberries, large
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon heavy cream
  • 2 tablespoons graham cracker crumbs (optional, for texture)
  • 1 tablespoon melted butter (if using graham cracker crumbs)

Instructions

  1. Prepare the strawberries: Wash and dry the strawberries. Carefully cut a small cone shape out of the top of each strawberry to create a cavity for the filling. Remove the core gently with a small spoon or melon baller.
  2. Make the cheesecake filling: In a medium bowl, beat the softened cream cheese until smooth. Add the powdered sugar, vanilla extract, and heavy cream. Mix until the filling is light and creamy.
  3. If using graham crackers, mix the crumbs and melted butter in a separate small bowl.
  4. Fill the strawberries: Transfer the cream cheese mixture to a piping bag fitted with a star tip, or use a small spoon. Pipe or spoon the filling into the cavity of each prepared strawberry.
  5. If desired, press a small amount of the graham cracker mixture onto the top of the filling for texture.
  6. Chill: Place the filled strawberries on a plate or tray lined with parchment paper. Refrigerate for at least 30 minutes to allow the filling to set before serving.

Notes

  • For a gluten-free option, omit the graham cracker crumbs entirely.
  • If you do not have a piping bag, you can use a small zip-top bag and snip a corner off.
  • These are best eaten the day they are made, but can be stored covered in the refrigerator for up to 2 days.
