1 cup rolled oats
1 cup creamy peanut butter
1/2 cup powdered sugar
1/4 cup butter, melted
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
2 tablespoons coconut oil
Instructions
Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
In a medium bowl, combine the rolled oats, peanut butter, powdered sugar, melted butter, and vanilla extract. Mix until completely combined and uniform.
Press this mixture evenly into the bottom of the prepared pan. Use the back of a spoon or a flat measuring cup to compact it firmly.
In a separate microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring well after each, until the chocolate is smooth and fully melted.
Pour the melted chocolate mixture over the oat base. Spread it evenly to cover the entire surface.
Refrigerate the bars for at least 2 hours, or until the chocolate topping is completely firm.
Use the parchment paper overhang to lift the bars from the pan. Cut into 16 squares.
Notes
For firmer bars, place them in the freezer for 30 minutes before slicing.
You can substitute almond butter for peanut butter if you prefer a different flavor.
Store leftovers in an airtight container in the refrigerator for up to one week.
