Make this simple, no-bake dessert featuring layers of lemon cheesecake filling and fresh strawberries set into a thin, breakable bark.

  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 cup fresh strawberries, thinly sliced
  • 1/4 cup white chocolate chips, melted (for drizzling)
  • 1/4 cup graham cracker crumbs (optional, for base layer)

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, beat the softened cream cheese until smooth.
  3. Add the powdered sugar, heavy cream, lemon zest, and lemon juice. Beat until the mixture is light and fluffy.
  4. If using graham cracker crumbs, spread them evenly over the bottom of the prepared pan and press lightly.
  5. Spread the cream cheese mixture evenly over the crumb layer or directly onto the parchment paper.
  6. Arrange the sliced strawberries evenly over the cream cheese layer. Gently press them slightly into the filling.
  7. Drizzle the melted white chocolate over the top of the strawberries. Use a knife or toothpick to gently swirl the chocolate if desired.
  8. Place the pan in the freezer for at least 4 hours, or until completely firm.
  9. Once frozen, lift the bark out of the pan using the parchment paper overhang.
  10. Break the frozen slab into irregular pieces (bark shapes).
  11. Store the bark in an airtight container in the freezer. Let it sit at room temperature for 5 minutes before serving.

Notes

  • For a more intense strawberry flavor, you can mix 1 tablespoon of freeze-dried strawberry powder into the cream cheese mixture.
  • Use good quality, ripe strawberries for the best taste.
  • If you do not have parchment paper, lightly grease the pan and line it with aluminum foil instead.
