  • 2 cups heavy cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt

  • 1 1/2 cups freshly grated Parmesan cheese (do not use pre-shredded)
  • 1/4 cup reserved pasta water (from cooked fettuccine)

Instructions

  1. Cook your fettuccine pasta according to package directions. Before draining, reserve about 1/2 cup of the starchy pasta water. Drain the pasta and set it aside.
  2. In a large saucepan over medium heat, melt the butter completely.
  3. Add the heavy cream, garlic powder, onion powder, salt, and pepper to the melted butter. Whisk constantly until the mixture is smooth and just begins to simmer gently. Do not let it boil rapidly.
  4. Reduce the heat to low. Gradually whisk in the grated Parmesan cheese, a handful at a time. Continue whisking until the cheese is fully melted and the sauce is smooth and creamy.
  5. If the sauce seems too thick, slowly whisk in the reserved pasta water, one tablespoon at a time, until you reach your desired consistency. This step helps the sauce cling perfectly to the pasta.
  6. Taste the sauce and add more salt or pepper if needed.
  7. Toss the cooked fettuccine immediately with the sauce, or serve the sauce over the pasta. Enjoy this restaurant style Alfredo sauce right away.

  • For the best texture, use high-quality, freshly grated Parmesan cheese. Pre-shredded cheese often contains anti-caking agents that can make your sauce grainy.
