1 cup unsalted butter
1 1/2 cups heavy cream
1 1/2 cups freshly grated Parmesan cheese
1/2 cup water
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
Instructions
Melt the butter in a medium saucepan over medium heat.
Whisk in the heavy cream and water until combined. Bring the mixture to a gentle simmer, stirring occasionally. Do not let it boil rapidly.
Reduce the heat to low. Gradually whisk in the grated Parmesan cheese until the sauce is smooth and the cheese is fully melted.
Stir in the salt, pepper, and garlic powder.
Continue to cook on low heat for 2 to 3 minutes, stirring constantly, until the sauce thickens slightly.
Remove from heat and serve immediately over hot pasta or use as a dip.
Notes
Use freshly grated Parmesan cheese for the best melting consistency and flavor. Pre-shredded cheese often contains anti-caking agents that can make the sauce grainy.
If the sauce becomes too thick upon standing, whisk in a tablespoon of warm milk or reserved pasta water to thin it out.
This sauce is excellent for dipping warm breadsticks.
