Prepare a complete, flavorful dinner using only one pan. This recipe features tender chicken and soft potatoes coated in a rich, creamy garlic and herb sauce.

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1.5 inch pieces
  • 1.5 lbs small potatoes (like Yukon Gold or red potatoes), quartered
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper for easier cleanup.
  2. In a large bowl, toss the quartered potatoes with half of the olive oil, salt, pepper, thyme, and rosemary. Spread the potatoes in a single layer on the prepared baking sheet.
  3. Roast the potatoes for 15 minutes to give them a head start.
  4. While the potatoes roast, toss the chicken pieces with the remaining olive oil, salt, pepper, and half of the minced garlic.
  5. Remove the pan from the oven. Push the potatoes to one side of the pan. Add the seasoned chicken to the empty space on the pan.
  6. Return the pan to the oven and roast for another 10 minutes.
  7. In a small bowl, whisk together the chicken broth, heavy cream, remaining minced garlic, and Parmesan cheese.
  8. Pour the cream mixture evenly over the chicken and potatoes on the pan.
  9. Return the pan to the oven and bake for 10 to 15 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C) and the sauce has thickened slightly.
  10. Remove from the oven, sprinkle with fresh parsley, and serve directly from the pan.

Notes

  • For crispier potatoes, toss them with the seasoning and roast them alone for 20 minutes before adding the chicken.
  • If you do not have heavy cream, you can substitute it with whole milk, but the sauce will be thinner.
  • You can add other quick-cooking vegetables like broccoli florets or sliced bell peppers during the last 10 minutes of cooking.
  • Use dried Italian seasoning blend if you do not have separate thyme and rosemary.
