Make tender turkey meatballs in one skillet and coat them in a bright, creamy lemon garlic sauce for a simple weeknight meal.

Ingredients

Scale
  • 1.5 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced (for meatballs)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced (for sauce)
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a bowl, combine ground turkey, breadcrumbs, egg, 2 minced garlic cloves, Parmesan cheese, oregano, salt, and pepper. Mix gently until just combined.
  2. Roll the mixture into 1-inch meatballs. You should have about 18-20 meatballs.
  3. Heat olive oil in a large, oven-safe skillet over medium-high heat. Brown the meatballs on all sides, working in batches if necessary. They do not need to be cooked through. Remove the browned meatballs and set them aside.
  4. Reduce the heat to medium. Add butter and the remaining 4 minced garlic cloves to the skillet. Cook for 1 minute until fragrant.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let the broth simmer for 2 minutes.
  6. Stir in the heavy cream, lemon juice, and lemon zest. Bring the sauce to a gentle simmer.
  7. Return the browned meatballs to the skillet, nestling them into the sauce.
  8. Cover the skillet and simmer on low heat for 10-12 minutes, or until the meatballs are cooked through (internal temperature reaches 165°F).
  9. Stir in the fresh parsley before serving.

Notes

  • Serve these meatballs over cooked pasta, rice, or with steamed green beans.
  • If you prefer a tangier sauce, increase the lemon juice by one tablespoon.
  • For a lower-fat option, substitute heavy cream with half-and-half, though the sauce will be thinner.
