One-Pan Mediterranean Shrimp Orzo

A quick and flavorful one-pan meal featuring succulent shrimp and tender orzo pasta, infused with classic Mediterranean ingredients for a delightful dinner.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Add shrimp and cook for 1-2 minutes per side, until pink. Remove shrimp from skillet and set aside.
  3. Add orzo to the skillet and toast for 1 minute, stirring constantly.
  4. Pour in chicken broth and diced tomatoes. Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes, or until orzo is tender and most of the liquid is absorbed.
  5. Stir in olives and cooked shrimp. Cook for another 2 minutes, or until shrimp is heated through.
  6. Remove from heat and stir in feta cheese and parsley. Season with salt and pepper.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes with the olives.
  • If you don’t have Kalamata olives, any pitted black or green olive will work.
  • Feel free to add other Mediterranean vegetables like chopped zucchini or bell peppers.
