1 tablespoon olive oil
1 pound shrimp, peeled and deveined
1 cup orzo pasta
2 cups chicken broth
1 (14.5 ounce) can diced tomatoes, undrained
1/2 cup Kalamata olives, pitted and halved
1/4 cup crumbled feta cheese
1/4 cup chopped fresh parsley
Salt and pepper to taste
Instructions
Heat olive oil in a large skillet or Dutch oven over medium-high heat.
Add shrimp and cook for 1-2 minutes per side, until pink. Remove shrimp from skillet and set aside.
Add orzo to the skillet and toast for 1 minute, stirring constantly.
Pour in chicken broth and diced tomatoes. Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes, or until orzo is tender and most of the liquid is absorbed.
Stir in olives and cooked shrimp. Cook for another 2 minutes, or until shrimp is heated through.
Remove from heat and stir in feta cheese and parsley. Season with salt and pepper.
Notes
For extra flavor, you can add a pinch of red pepper flakes with the olives.
If you don’t have Kalamata olives, any pitted black or green olive will work.
Feel free to add other Mediterranean vegetables like chopped zucchini or bell peppers.
