Enjoy a simple and flavorful weeknight meal with this One-Pot Caprese Chicken Pasta. It combines tender chicken, pasta, and fresh summer ingredients like tomatoes, basil, and mozzarella in a single pot for easy cleanup.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and freshly ground black pepper to taste
  • 1/2 teaspoon dried Italian seasoning
  • 3 cloves garlic, minced
  • 1 pint cherry tomatoes, halved
  • 4 cups chicken broth
  • 12 ounces dried pasta (such as rotini or penne)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 4 ounces fresh mozzarella pearls, halved

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add chicken pieces, season with salt, pepper, and Italian seasoning. Cook until browned on all sides.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Stir in the halved cherry tomatoes and cook for 2-3 minutes until they begin to soften.
  5. Pour in the chicken broth and bring to a boil.
  6. Add the dried pasta, stir to combine, and reduce heat to medium-low.
  7. Cover and simmer for 12-15 minutes, or until pasta is al dente and most of the liquid has been absorbed, stirring occasionally.
  8. Stir in the grated Parmesan cheese until melted and creamy.
  9. Remove from heat and stir in fresh basil and mozzarella pearls.
  10. Serve immediately.

Notes

  • For a spicier kick, add a pinch of red pepper flakes with the garlic.
  • If you don’t have fresh mozzarella, you can use shredded mozzarella, but add it during the last few minutes of cooking.
  • Feel free to add other vegetables like spinach or zucchini during the last 5 minutes of cooking.
