One-Pot Chicken and Rice with Lemon and Herbs

Cook tender chicken and flavorful rice together in a single pot for an easy weeknight meal with minimal cleanup.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, rinsed
  • 2 cups chicken broth
  • 1/2 cup water
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat.
  2. Season the chicken pieces with salt and pepper. Add the chicken to the pot and cook until browned on all sides, about 5 minutes. Remove the chicken and set it aside.
  3. Add the chopped onion to the pot and cook until softened, about 4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Stir in the rinsed rice, oregano, and thyme. Cook for 1 minute, stirring constantly.
  5. Pour in the chicken broth and water. Scrape up any browned bits from the bottom of the pot. Bring the liquid to a boil.
  6. Return the browned chicken to the pot. Reduce the heat to low, cover the pot tightly, and simmer for 18 to 20 minutes, or until the rice is tender and the liquid is absorbed. Do not lift the lid during simmering.
  7. Remove the pot from the heat. Let it stand, covered, for 5 minutes.
  8. Fluff the rice gently with a fork. Stir in the lemon zest, lemon juice, and fresh parsley. Taste and adjust seasoning if needed. Serve directly from the pot.

Notes

  • Rinsing the rice removes excess starch, which helps prevent the final dish from becoming too sticky.
  • Use chicken breasts instead of thighs, but reduce the cooking time slightly if they are cut into small pieces.
  • For extra flavor, add 1/2 cup of frozen peas during the last 5 minutes of cooking.
