1 tablespoon olive oil
1 small yellow onion, chopped
2 cloves garlic, minced
1 cup quinoa, rinsed
2 cups vegetable broth
1 (15 ounce) can chickpeas, rinsed and drained
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups fresh spinach
1/4 cup fresh lemon juice
2 tablespoons nutritional yeast (or 1/4 cup crumbled feta for non-vegan)
Instructions
Heat the olive oil in a large pot or deep skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
Add the minced garlic and cook for 1 minute until fragrant.
Stir in the rinsed quinoa, vegetable broth, chickpeas, oregano, salt, and pepper. Bring the mixture to a boil.
Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes, or until the liquid is absorbed and the quinoa is cooked. Do not lift the lid during this time.
Remove the pot from the heat. Stir in the fresh spinach until it wilts, about 2 minutes.
Stir in the lemon juice and nutritional yeast (or feta). Fluff the mixture gently with a fork before serving.
Notes
Rinsing the quinoa removes saponins, which can make the final dish taste bitter.
For added flavor, add 1/2 teaspoon of smoked paprika with the oregano.
This recipe works well for meal prepping; store leftovers in an airtight container in the refrigerator for up to 4 days.
