Make a rich, cheesy, and satisfying dinner with this simple one-pot recipe. This dish combines tender rice, fresh broccoli, and a homemade cheddar sauce for easy weeknight cooking.

  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 3 cups chicken or vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 cups fresh broccoli florets
  • 1/2 cup milk (whole or 2%)
  • 2 cups shredded sharp cheddar cheese
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water

Instructions

  1. Heat the olive oil in a large, deep pot or Dutch oven over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Stir in the uncooked rice, salt, pepper, and garlic powder. Cook for 1 minute, stirring constantly.
  4. Pour in the broth. Bring the mixture to a boil, then immediately reduce the heat to low, cover the pot, and simmer for 15 minutes. Do not lift the lid during this time.
  5. Remove the pot from the heat. Stir in the fresh broccoli florets. Keep the pot covered for an additional 5 minutes to allow the residual heat to steam the broccoli.
  6. While the broccoli steams, whisk together the milk, shredded cheddar cheese, and cornstarch in a small bowl until smooth.
  7. Uncover the pot. Stir the cheese mixture into the rice until the cheese melts and the sauce thickens to a creamy consistency. If the sauce is too thick, add a splash more milk or broth until you reach your desired creaminess.
  8. Serve immediately.

Notes

  • For extra flavor, use half sharp cheddar and half mild cheddar cheese.
  • If you do not have broth, you can use water, but the flavor will be less deep.
  • To keep the sauce smooth, remove the pot from direct heat before stirring in the cheese mixture.
